Recipe: (makes around 20)
- 2 cups of oats
- 7-10 medjool dates (depends on how sweet you would like it)
- 1/3 cup of pumpkin puree
- 1 teaspoon of cinnamon
- 1/2 teaspoon of nutmeg
Pit the dates.
Blend the oats until flour like consistency.
Add the cinnamon, nutmeg, and pumpkin puree and blend.
Gradually add in the dates and around 3-4 tablespoons of water (especially if using a blender rather than a food processor).
Place on a tray and freeze for about 10-15 minutes so it’s a little easier to roll.
Roll into balls, optional to roll into various toppings such as shredded coconut, ground flax seeds, cacao powder, cinnamon, etc. And enjoy!
