Stevia sugar features high sweetness and low calorie and its sweetness is 200 350  times of that  of cane sugar but its calorie is only 1/300 of that of cane sugar.

The component of stevia extract that gives it its sweetness is a mixture of various steviol glycosides. The components of sweetness in stevia leaves are stevioside, rebaudioside A, C, D, E and dulcoside A. Rebaudioside C, D, E and dulcoside A are small in quantity. The principal components are stevioside and rebaudioside A.

The quality of stevioside and rebaudiosideA is better than those of other components, which are commercially extracted and used in various applications.

The steviol glycosides present in stevia extract are referred to as “steviosides” or ¡°stevia extract¡±. Among these “steviosides”, the most common is Stevioside followed by RebaudiosideA. The Stevioside has a slight and pleasant herbal taste and the Rebaudioside-A has no herbal taste.

Although Rebaudioside C and dulcoside A are small in quantity in stevia extract, they are the major components giving bitter aftertaste.

Seriously, they are almost fool proof, look and taste just like muffins and will satisfy that craving for a disastrous store bought muffin.

    As will all of my recipes, this doesn’t take long at all, fits perfectly into a low carb, keto, ketogenic, or banting lifestyle and will be something the whole family will enjoy.     This keto recipe is as simple as mixing the wet ingredients in a bowl, mixing the dry ingredients in a bowl, mixing the wet and dry together and popping it in the oven in a muffin tray! Yes, that is it and you end up with delicious keto muffins (well keto blueberry muffins to be precise). The blueberries give this low carb recipe such a great touch as you get to taste the blueberries in every bite as they bake right into these low carb blueberry muffins. They are made with coconut flour so you have grain free muffins and gluten free muffins for those avoiding grain and gluten. The coconut flour is of course low carb so it make a perfect base for these coconut flour muffins.

    Ingredients:
    1/2 cup Coconut Flour (55g / 1.94oz)
    1 teaspoon Baking Powder (5g / 0.18oz)
    1/4 teaspoon Salt (1.25g / 0.04oz)
    1/8 cup or 2 Tablespoons Stevia (3g / 0.11oz)
    1/8 cup or 2 Tablespoons Xylitol (24g / 0.85oz)
    1/4 cup of Butter (melted) (1/2 stick / 58g / 2oz)
    6 Large Eggs
    1/2 teaspoon Vanilla Essence / Extract (2.5g / 0.09oz)
    ½ cup Blueberries (75g / 2.6oz)

    Add wet ingredients together, add dry ingredients together. Mix wet and dry together. Add to a 12 hole muffin tray (less holes for bigger muffins) and bake for 20 – 30mins.

    Calories: 97
    Fat: 7g
    Net Carbs: 2g (4g carbs – 2g fibre)
    Protein: 4g

    Macros for entire batch:
    Calories: 1165
    Fat: 84g
    Net Carbs: 25g (47g carbs – 22g fibre)
    Protein: 45g
