Ingredients:
½ cup hemp seeds
½ cup pumpkin seeds
1 ½ cups oats
½ cup vegan chocolate chips
15 pitted medjool dates
¼ cup maple syrup
vanilla extract
Gently toast oats on a baking sheet until they become fragrant, between 3-5 minutes.
Mix ingredients thoroughly in a large bowl. Blend your dates in the food processor until creamy. Set aside. Once your seeds/oats are out of the oven place everything in a bowl and mix together with your hands.
Press well into a parchment lined baking dish.
Freeze for 20- 30 minutes.
Cut.
Store in the refrigerator for up to a week.
