Ingredienti Ricetta
Ingredienti per 20 biscotti
100 g di farina integrale
50 g di fiocchi d’avena
40 g di preparato a base di stevia ed eritritolo o un altro tipo di dolcificante
20 ml di olio di semi di mais
50 g + 10 g di nocciole
50 g di datteri
4 g di lievito per dolci
50 ml di acqua
1 pizzico di sale
Preparazione Biscotti Integrali Vegani Senza Zucchero Aggiunto
1. In un frullatore, riunire 50 g di nocciole ed i fiocchi d’avena: tritare fino ad ottenere una polvere impalpabile.
2. Denocciolare i datteri, tagliarli a pezzi e riunirli nel bicchiere di un frullatore. Tritare i datteri fino a formare una crema.
3. In una ciotola, riunire la polvere di nocciole ed avena, la farina integrale, il lievito setacciato, il sale ed il dolcificante a base di stevia ed eritritolo.
Dolcificante stevia ed eritritolo: di che si tratta?
La stevia (Stevia rebudiana) è una pianta perenne da sempre apprezzata per le sue straordinarie capacità dolcificanti. Non a caso, la stevia è battezzata anche con il nome di “erba dolce o erba del miele”: infatti, le sue foglie sono ricchissime di componenti glucosidici (es. stevioside) dal potere edulcorante che arriva talvolta a superare di 300 volte la dolcezza del saccarosio. Possiede anche proprietà ipoglicemizzanti e si può definire una sostanza acariogena.
L’eritritolo è un dolcificante innovativo appartenente alla categoria dei polioli. È una sostanza naturalmente presente nella frutta e nei cibi fermentati (ma viene prodotto anche industrialmente per fermentazione batterica degli zuccheri) e possiede un indice glicemico pari a zero. Inoltre, questo particolare dolcificante apporta solo 0.2 Kcal/g ed ha un potere dolcificante di circa il 70% rispetto allo zucchero classico.
Entrambe le sostanze dolcificanti sono stabili al calore e non caramellano in cottura!
1 g di questa polvere dolcificante è in grado di apportare la stessa dolcezza fornita da 2 g di saccarosio, con un risparmio calorico del 100%!
4. Con le mani, amalgamare le polveri con la crema di datteri: si dovrà ottenere un composto di briciole.
5. A questo punto, mischiare il tutto con olio di semi ed acqua: amalgamare con le mani ed ottenere una pasta morbida e non appiccicosa.
6. Avvolgere la pasta in un foglio di pellicola trasparente e lasciar riposare per mezz’ora.
7. Con il matterello, stendere la pasta di biscotti sulla spianatoia, aiutandosi eventualmente con un po’ di farina integrale. Ottenere uno sfoglio di pasta dallo spessore di circa mezzo centimetro.
8. Con un taglia-biscotti dalla forma a piacere ottenere i biscotti e disporli man mano su una piastra foderata con carta da forno. I ritagli si possono rimpastare per ricavare altri biscotti.
9. Tagliare a metà le nocciole rimanenti.
10. Inserire metà nocciola al centro di ogni biscotto.
11. Infornare i biscotti e cuocere a forno caldo, preriscaldato a 180°C, per 12 minuti (per ottenere biscotti morbidi) o per 15 minuti (per ottenere biscotti più croccanti).
12. Sfornare i biscotti, lasciar intiepidire e servire.
13. I biscotti vegani senza zuccheri aggiunti si possono conservare in una scatola di latta per 7-10 giorni.
