Broccoli is a member of the cabbage family, and is closely related to cauliflower. Its cultivation originated in Italy. Broccolo, its Italian name, means “cabbage sprout.” Because of its different components, broccoli provides a range of tastes and textures, from soft and flowery (the floret) to fibrous and crunchy (the stem and stalk). Broccoli contains glucosinolates, phytochemicals which break down to compounds called indoles and isothiocyanates (such as sulphoraphane). Broccoli also contains the carotenoid, lutein. Broccoli is an excellent source of the vitamins K, C, and A, as well as folate and fiber. Broccoli is a very good source of phosphorus, potassium, magnesium and the vitamins B6 and E.

A greater understanding of the chemistry of these pigments has led to improved methods for stabilizing the color of anthocyanins extracts, so that they are more useful as food colorings. Methods for the bulk production of anthocyanins from cell cultures have been optimized for this purpose.possible benefits to human health from the ingestion of anthocyanin-rich foods have also been a major feature of the recent scientific literature. Root knot nematodes have been an ongoing issue for us in the garden over the past few years.. We have tried a few methods in controlling them & think we have finally found one that we will be using from now on.. Not only will this method help control the nematodes it will also help add organic matter back into the soil.. Another bonus is that we will be able to save the seeds from crop to crop giving us an almost endless supply of soil treatments for free..
