Quercetin is a plant pigment (flavonoid). It is found in many plants and foods, such as red wine, onions, green tea, apples, berries, Ginkgo biloba, St. John’s wort, American elder, and others. Buckwheat tea has a large amount of quercetin. People use quercetin as a medicine.

Quercetin is used for treating conditions of the heart and blood vessels including “hardening of the arteries” (atherosclerosis), high cholesterol, heart disease, and circulation problems. Ingredients
Compote
1 cup strawberries
1/4 cup blueberries
1 tsp agave nectar, maple syrup, or other liquid sweetener
1/4 tsp vanilla extract

Waffles
3/4 cup pancake mix (for pancake mix recipe go to www.avegandiva.blogspot.com
1/4 to 1/2 cup non-dairy milk
1 tbsp blueberries
1/2 tbsp canola oil
1/2 tsp vanilla extract

To make the compote: Place all compote ingredients except the vanilla extract in a sauce pan. Boil until strawberries cook down to a thick syrup. Remove from heat and stir in extract. Set aside.

To make the waffles: Combine all waffle ingredients in a bowl. Pour onto waffle iron and cook according to manufacturer’s instructions until waffle is cooked through.

Serve waffle hot topped with vegan butter and berry compote.
