Ingredients
1/4 cup Raw Pumpkin Seeds
1/4 cup Cocoa Nibs
12 pitted Dates 60 – 70g
1 Tbsp Organic Coconut Flour
1 Tbsp maple syrup
1/2 cup Chai Protein Powder Nutritional Booster
1/4 tsp ground Cinnamon
1/8 tsp ground allspice
1/8 tsp ground Nutmeg
1/4 cup pumpkin puree
1/2 cup Fine Macaroon Coconut optional
Instructions
Place pumpkin seeds and cocoa nibs in a food processor and pulse until they resemble large crumbs; remove and set aside.
Place dates in the food processor and process until broken into small crumbles.
Add remaining ingredients, including the reserved pumpkin seed mixture, to the food processor and process until a dough forms, about 1 – 2 minutes.
Portion 1 tablespoon per serving and shape each into a ball. If desired, roll each ball in coconut. Store covered and chilled.
