Brief Introduction
Salicin is a naturally occurring compound found in the bark of several species of trees, primarily North American in origin, that are from the willow, poplar, and aspen families. White willow, from whose Latin name, Salix alba, the term salicin is derived, is the most well known source of this compound, but it is found in a number of other trees, shrubs, and herbaceous plants as well being synthesized commercially. It is a member of the glucoside family of chemicals and is used as an analgesic and antipyretic. Salicin is used as a precursor for the synthesis of salicylic acid and acetylsalicylic acid, commonly known as aspirin.
A colorless, crystalline solid in its pure form, salicin has the chemical formula C13H18O7. Part of its chemical structure is equivalent to the sugar glucose, meaning it is classified as a glucoside. It is soluble, but not strongly so, in water and alcolhol. Salicin has a bitter taste and is a natural analgesic and antipyretic, or fever reducer. In large quantities, it can be toxic, and overdoses may lead to liver and kidney damage. In its raw form, it may be mildly irritating to skin, respiratory organs, and eyes.

Making Raw Chocolate is easy. Not only is it hard to make bad chocolate, its also hard to not enjoy the process of making it.
Join sisters Marussia and Kyla Nesling, as they take you through an easy way to make great tasting Raw chocolate, using 5 simple ingredients.
1/2 Cups Raw Cacao Powder
1/4 Cup Coconut Oil
1/4 Cup Cocoa Butter Wafers chopped
1/4 Cup Agave Nectar or Maple Syrup
½ tsp Vanilla Bean Powder
A Pinch Salt
In this method we melt down a 1/4 cup of cacao butter, and a 1/4 cup of coconut oil in a hot water double boiler as in the video or in a sauce pan on low heat on the stove.
Once melted, add in 1/2 a cup of Cacao powder, 1 teaspoon of vanilla powder and a pinch of salt and mix well.
Next add 1/4 cup of liquid sweetener, maple syrup or agave nectar are preferred and stir.
At this point you can add any extra ingredients of choice to flavour the chocolate. Be sure to have them prepped ahead of time as the chocolate will start to harden.
While still liquid the chocolate can be places in silicon moulds or a yogurt container lid and placed in the fridge or freezer to harden.
Some ideas for add in ingredients are; dried fruit and nuts, cacao nibs, candied ginger, hemp seeds, coconut, bee pollen, maca, spirulina, cinnamon, ginger, cayenne, medicinal mushrooms powders or a drop or two of an essential oil.
